The Apples / Jamun are physically verified / inspected to ensure there are no cuts or abrasions on the surface and there is no extraneous matter sticking to it. Later they are cleaned thoroughly with water to ensure there is no extraneous matter, and also there is no carryover of pesticides.
The fermentation vessel is cleaned thoroughly with plenty of water after each and every batch. This is to ensure there is no carryover of the remnants of the previous batch. Later the fermentation vessel is cleaned with boiling hot water to ensure that the yeast strains from the previous batch are neutralised.
The fermentors are covered with a lid having a water trap, to prevent insects / dust particles from entering into the fermentors.
After the fermentation is over, the end product i.e.Apple Cider Vinegar / Jamun Vinegar is filled into Glass bottles. To maintain the food safety standards only glass bottles are used. This is our USP. Before filling the end product into the bottles, they are sterilised using hot water. This is to prevent any microbial growth in the bottles. The bottles are sealed/crimped using metallic crowns.
